Snails (pains aux raisins)

Le snail, aka le pain aux raisins, is my favourite danish, and it’s not just a writing style to say this . . .
Time needed 14h croissant pastry, 1h preparation.

Pastry snails are slices of a croissant pastry log, filled in with a vanilla custard, itself sprinkled with water-softened sultanas.
There’s a beautiful pastry snail in the middle of the plate in the picture on the right.
